Family Favorites

Mom's caramel corn was the best!  We all loved it when mom made her "Karo Crazy Crunch" we couldn't even wait for it to cool before we were stealing bites of its deliciousness burning our fingers and mouths.
We had a donkey for a pet and she just loved it when I would bring her out a little bite of mom's crazy corn.

Betty's Karo Crazy Crunch

2 qt popped corn
1-1/3 cups toasted pecans
2/3 cups almonds
1-1/2 cups brown sugar
1 cup oleo
1/2 cup white Karo syrup
1 tsp vanilla

Mix nuts & corn on cookie sheet.  Combine sugar, oleo & syrup.  Bring to a boil stirring constantly.  Continue boiling 10-15 min. or till mixture turns a light caramel color. (can be tested in a cold glass of water to check for soft ball stage) Remove from heat and add 1 tsp of vanilla and stir then pour over corn and nuts mix to coat well spread out to dry.
Break apart and store in tightly covered container.  (ours never made it to this part)

Grandma Mamo's Sandies

1 cup butter
1 cup powdered sugar
2 Tb cream or milk
2 tsp venella
2 cups flour
1/2 tsp salt
1/2 cup pecans chopped fine
Cream butter & sugar well add cream and vanilla.
Mix flour and salt and add to the cream mixture and mix well.
Add nuts and mix.
form into small balls and place on cookie sheet
Bake at 350  8-12 min

Grandma Mamo was my mom's mother.  We loved it when grandma came for the holidays the house would fill up with wonderful smells of her cookies and candy.  In the summer if some kind of fruit was on she would be making jam.  I remember she came not long after I had my tonsils out and she made divinity.  Oh her divinity is sooooo good but it had nuts in it and it hurt to eat it.  Still the pain in my throat didn't keep me from sneaking some when no one was looking.  Grandma was a great cook. 


Doug's Corn Dish

1 can whole corn drained
1 can cream corn
8 oz sour cream
2 eggs
1 stick of butter
1 small box of Jiffy corn bread mix
Mix together and bake at 350 for 1 hour.

We went to a friends wedding in Iowa and their family served this at one of the meals we ate with them.  It has become a family favorite.  We have added a little Idaho Southwest flavor to it that if you like it spice up a bit you might want to try.  Add 1 can of chili's and a drained can of sliced olives.


Grandma Rain's Fresh Apple Cake

Cream together: 1/4 cup margarine & 1 cup brown sugar.  Add one egg beat well

Sift together:  1 cup flour, 1/2 tsp cloves, 1 tsp cinnamon, 1 tsp baking soda,  1/4 tsp salt

Peel and grate:  about 4 apples or enough for 2 cups grated.

Add alternately to creamed mixture in this order:
1/3 of flour mix, then 1/2 grated apples, then ,flour, than apples then flour.  Mix
well after each addition.

Add: 1 cup chopped nuts and 1/2 cup chopped dates.

Bake in a greased and flour dusted loaf pan.
1 to 1 1/2 hours T 325 -350

I was adopted as a baby, in 1997 I found my birth mom.  That spring we went to the coast and I got to meet my birth family for the first time.  Grandma gave me this recipe.
